3 Recipes From Aunt Dolores
*”Lefty O’doul’s Chili”
4 T oil
2 large (chopped) onions
4 (minced) garlic cubes
4 # lean stew meat
3 # pork sausage
Sauté & add meat brown drain
56 oz canned tomatoes
2 T cocoa powder
2 6oz tomato paste
6 T chili powder
3 t cumin
1 T oregano
2 t salt
2 t sugar
Stir & simmer for 2 hrs
32 oz baked beans
2 15oz kidney beans
2 15oz pinto beans
Add & cook 30 min
She wrote;
I use leftover roast, steak, or chops and Italian sausage.
Also soak & cooking my own beans
Cocoa prevents gas
*”Hash Brown Bake”.
Yields: 9×13 or 2 8×8
Mix together=
1 large bag of thawed hash browns
1 can cream of chicken soup
3/4 c sour cream
3/4 c mayonnaise
2 c cubed ham
Onion to taste
Spread in a pan, cover w/2 c. shred. cheese (cheddar)
Spread 2 c crushed corn flakes & pour 1/4 c melted butter on top.
Bake 1 hr 350 degrees
Can be made day before and refrigerate till used. Freezes well.
*”Cinnamon Bundt Cake”
Cake-
1 yellow cake mix
1 pkg instant vanilla pudding
1 c sour cream
1 T vanilla
4 eggs
1/2 c oil
Cinnamon mix = 3/4 c white sugar, 2 T cinnamon, 1 c chopped nuts
Spray Bundt pan w/oil, dust w/some of cinn-sugar mix. Beat cake mixture for 5 min. Pour 1/2 of cake mixture into pan. Sprinkle 3/4 cinn-mix over batter. Pour remaining cake batter in pan. Sprinkle last of cinn. Mix on top. Marble cake w/knife
Bake 350 degrees for 50 min, let cool 10 min. Put plate on top & flip.
Freezes well.

The Lutefisk Feed

Open the windows, open the doors,
Air out the church, “Thank Goodness,” it’s just once a year,
Light up some candles, bake up some pies,
Please, do it well, pray, if you’re wise,
Get rid of that Lutefisk smell, I despise!
I enjoy Rommegrot, Krumekakke, Lefse, Fattigman, and Torsk,
Rosettes, Flat-bread, Tapioca in a “Sweet Soup,” ’cause I’m Norwegian, of course.
But, when it comes to that jellied, buttered cod-fish soaked in lye,
I won’t touch it, and “yes,” many times, I have tried!
To some, it’s a treat, but for me, I can’t lie,
I really can’t eat it, smell it, or, I’ll cry.
So,
