“Aunt Sally Cookies”

Cookies
     1 cup shortening
     1 cup sugar
Cream together, add molasses, then other ingredients.
     1 1/2 cup molasses (use Light Brer Rabbit)
     1 tsp. salt
     1/4 tsp. cloves
     1/4 tsp. cinnamon
     1/2 tsp. ginger
     1/2 tsp. nutmeg
     2 top. soda in 1/2 cup cold coffee
      6 cups flour
Chill dough overnight, roll out quite thick. Cut with Spam can.
Bake 350° 12-15 minutes
Frost the underside of cookie with frosting.

Frosting
Soak 1 pkg. Knox gelatine in 3/4 cup cold water in saucepan. Add 3/4 cup sugar and simmer 10 minutes. Pour this over 1 3/4 cup powdered sugar. (Add a little vanilla and salt)
Beat until foamy. Add 3/4 tsp. baking powder.
Beat until thick enough to spread, about the consistency of melted marshmallows. Back side of a teaspoon works best for dipping and frosting. Leave outer edge around cookie unfrosted.

“Hazel’s Honey Jumbles”
Hazel was a long time friend of my mom’s from the VA. She was a nurse nicknamed “Boo-boo,” and she lived to be 99 years young.

1 c. flour
2 tsp. soda
1 c. brown sugar
1 c. honey
3 beaten eggs
1 tsp. vanilla
1 tsp. lemon extract
3 1/2 c. flour (or less)

Sift together flour, brown sugar and soda. Add honey, beaten eggs, vanilla and lemon. Add enough flour to make a stiff dough. Let stand in refrigerator overnight.
Next morning, roll to 1/8 inch thickness; cut with donut cutter. (or Spam can) Bake at 350-375 degrees for 8-10 minutes.

Cool, then coat with frosting or icing.

As I look in the mirror at the start of each day,
I remember another wise tidbit my mom used to say.
People would ask how she still looked so young,
Her response showed her sense of humor, and fun.
‘Balloons don’t have wrinkles!’ she’d say with a laugh and a smile,
Nothing deterred Mom from her classical, beauty and style.
As I’m nearing my sixtieth midway,
To others struggling with self image, aging or weight, I will say,
‘No matter whether I’m thick or thin,
I’m the same person without and within!’
And, she was!
