Vivian’s Date-filled Cookies
These were cookies my mom baked for my daughter Kaira and I in her last apartment in Madison, MN.
Mix together…1/2 c shortening
1 c sugar
2 eggs
Stir in…………..2 T thick cream
1 t vanilla
Sift together and add…2 1/2 c flour
1/4 t soda
1/2 t salt
Chill dough. Roll thin. Cut round base plus round top with hole cut in middle.
On a lightly greased baking sheet place bottom, then, spread filling almost to edges, place top cookie, press edges. In a 400 degree oven, bake 8-10 minutes until lightly browned.
Makes about 6 dozen 3″ cookies.
Date filling;
Mix together in saucepan…1 1/2 c dates
1/2 c sugar
1/2 c water
2 T lemon juice
Cook slowly, stirring until thickened. About 5 minutes. Cool. (Enough to fill 4 dozen cookies)
